Common Non-conformities Found During Food Hygiene Inspections of Taiwan’s Restaurants

Taiwan's Food and Drug Administration (Taiwan FDA) often uses well-illustrated examples to help food workers have a thorough understanding of food hygiene management and know how to do it themselves. Below are common non-conformities found during food hygiene inspections of Taiwan’s restaurants.
Actually those problems are not uncommon in Hong Kong’s restaurants, and worth the attention of local caterers and food workers. To date, Hong Kong government does not stipulate that food hygiene manager or food hygiene supervisor must attend refresher training courses concerning food safety knowledge and awareness. As such, the capability of some food hygiene managers / supervisors who are reluctant to learn, in safeguarding food hygiene and safety is questioned.
Private food hygiene certification schemes have already been developed by few independent third-parties, and can indicate food hygiene rating objectively. Local restaurants reaching high food safety standards are highly recommended to seek for certification and display the hygiene ratings they get. This helps to differentiate themselves from other less qualified competitors, and increases their incentives for continual improvement in food hygiene.
